THE SOUL OF A WINSTUB Insiders believe they know where to find the starting point of the underground passageway which, it is said, allowed monks and Cathedral workers to come and have a drink in complete secrecy. Others mention the presence of a "Sarich", or rather the Stammtisch table of the time, a table with a coffin-like appearance that is naturally mystical. It's a little forgotten, but winstubs are these Rhineland estaminets where people come to drink wine in an Alsatian décor of curtains and checked tablecloths. Sometimes you even bring your own food, so the menu is succinct.
